Η Τζωρτζίνα Ασημακοπούλου έλαβε το Δίπλωμα του Ηλεκτρολόγου Μηχανικού και Μηχανικού Υπολογιστών από τη Σχολή Ηλεκτρολόγων Μηχανικών και Μηχανικών Υπολογιστών του Εθνικού Μετσοβίου Πολυτεχνείου (ΕΜΠ) το 2007 και τον τίτλο του Διδάκτορα Μηχανικού του ΕΜΠ το 2017. Έχει απασχοληθεί στη ΔΕΗ/Διεύθυνση Δικτύου ως εξωτερική συνεργάτις (2008-2009), καθώς επίσης και στο Ίδρυμα Οικονομικών και Βιομηχανικών Ερευνών ως Επιστημονική Συνεργάτις στη Μονάδα Παρακολούθησης και Ανάλυσης του Τομέα Ηλεκτρικής Ενέργειας (2009-2012). Από το 2007 έως και σήμερα εργάζεται στο Εργαστήριο Συστημάτων Ηλεκτρικής Ενέργειας του Τομέα Ισχύος της Σχολής Ηλεκτρολόγων Μηχανικών και Μηχανικών Υπολογιστών του ΕΜΠ. Έχει συμμετάσχει σε 11 ερευνητικά έργα χρηματοδοτούμενα από την ΕΕ (Horizon 2020, FP7, FP6) και σε εθνικά ερευνητικά έργα χρηματοδοτούμενα από τον ΔΕΔΔΗΕ. Στα ερευνητικά της ενδιαφέροντα συγκαταλέγεται η εφαρμογή αναλυτικών μεθόδων για τη βέλτιστη λήψη αποφάσεων στον τομέα της ενέργειας. Είναι μέλος του Τεχνικού Επιμελητηρίου Ελλάδος.
